How can I see which Cards I'm missing?

You can easily check what Cards you got and what cards are missing by looking at each Set. Already collected Cards will be shown in the Album while missing ones will show only empty spaces. You can also see the rarity (represented in Stars) and type of the missing Cards, but not their names.
